Monitor and assign a server tables based on the sizes of the party and by which servers are next in the rotation.

Work with technology like iPads to take down names of guests and notify them when they’re able to sit down.

Occasionally grab high chairs and regular chairs for guests as well as add or remove tables to make other tables bigger/smaller.
